Muffins de blueberries doble

Y les digo doble, porque use la pulpa para la preparación, pero además le agregué blueberries frescos para darles una textura y sabor más intensos. Esta receta rica en fibra y antioxidantes, es muy fácil de hacer y verán que no tiene pierde.

2 tazas harina de avena
3 unidades huevo
1 taza pulpa de blueberries (o la fruta que tengan) sin azúcar
120ml yogurt griego light
1/2 taza xilitol (o el endulzante que gusten)
2 cucharaditas polvo de hornear
1 cucharadita esencia de vainilla
2-3 cucharadas blueberries frescos o congelados.

1. Pre calienten el horno a 180 grados C.
2. Mezclen los huevos con el endulzante hasta que lo disuelvan.
3. Agregarle a la mezcla el yogurt, vainilla y la pulpa de blueberries.
4. Luego la harina de avena, polvo de hornear y mezclar hasta obtener una masa homogénea y luego agreguen los blueberries.
5. Coloquen la mezcla en moldes para muffins y para que les queden las marquitas del costado usen pirotines del tamaño del molde que encuentran en cualquier supermercado o mercado.
6. Horneen por 20 – 30 minutos aproximadamente, ustedes vayan viendo con la ayuda de un palito porque cada horno es un mundo.
