Galletas de Jengibre bajas en grasa

Estas galletas son bajas en grasas porque estoy utilizando puré de frijoles cocidos en vez de mayor cantidad de ghee. De esa manera también aumento la cantidad de fibra de las galletas.

Solo necesitas:

310 gramos Harina de trigo integral tamizada
85 gramos Frijoles blancos cocidos y hechos puré
6 cucharadas panela
65 gramos ghee o mantequilla clarificada
1 cucharadita canela en polvo
3 cucharaditas ion en polvo
1/2 cucharadita Stevia
1 unidad Huevo ecológico
Para decorar Chispas de chocolate

  1. Mezclar los ingredientes húmedos con la panela en un bowl a mano o con la ayuda de una batidora.
  2. Una vez obtenida una mezcla homogénea, agregar los demás ingredientes hasta obtener una masa suave.
  3. Con ayuda de papel manteca (dos capas, una arriba y otra abajo de la masa) amasar con un rodillo hasta obtener la masa plana lista para cortar con moldes de galletas de aproximadamente medio centímetro de grosor.
  4. Colocar en una bandeja para el horno papel manteca y las galletas encima.
  5. Decoren con chispas de chocolate o lo que más les guste.
  6. Al horno por 5 minutos a 180C y luego voltéenlas y al horno por 2 minutos más.
